Our Story

Since 2013

Cole’s Bakery & Café is Spokane’s first and only full-service gluten free restaurant. We proudly offer good food that is always 100% gluten-free and peanut-free.  Cole’s serves Breakfast, Lunch, and Dinner all day, and we are open 7 days a week!

​We have many Dairy Free (DF), Vegan and Keto options available and make custom cakes for your special occasion!

Our History

2020 with the pandemic in full swing, Cole’s had to be nimble to adjust business operations to navigate this unprecedented time.

2019 brought continued change as we remodeled the old place and brought new and exciting offerings such as Keto and Vegan items to our menu.

2018 brought growth as we expanded seating, and remodeled the bakery kitchen and acquired a Drive Thru.

2017 was a year was a fun year of getting the word out by participating in local farmers markets.

2016 brought with it an opportunity to start the full-service restaurant and offer more than just baked goods.  We began offering Breakfast, Lunch and Dinner 7 days per week. Construction was underway as the new restaurant came together staff were hired, menus prepared, and recipes tested.

2015 was a year of growth as we expanded our bakery offerings to include Grab and Go items such as family-sized lasagna and other easy to heat entrees right from the freezer.

2014 brought challenges as Cole’s navigated the construction, compliance with state and federal rules, and marketing to start the business.

2013 founded in 2013, Cole’s had a vision of creating a safe place and offering delicious food for people with allergies so they, and their families can enjoy a meal together.
